Concession-stand food is an easy win at graduation parties, school nights, church festivals and office picnics in Chicago. Hot dogs and nachos need little skill. They do need power, a plan for holding temperature and some supplies. Here is how to count them.

How many hot dogs per roller

Hot dog roller capacity versus guests served Top-down diagram of a hot dog roller with 7 rollers holding 28 hot dogs, next to a bar chart of rollers needed: 1 for 25 guests, 2 for 100, 3 for 150 and 4 for 200 guests at 1.5 hot dogs each. Rollers needed at about 1.5 hot dogs per guest.

Capacity depends on the model, usually 18 to 30. A dog needs 20 to 30 minutes to heat from cold on a roller, and the roller should not be used to cook raw hot dogs from frozen. Cooked, pre-heated dogs hold best. Start the roller 20 minutes before service. Rollers also hold dogs for too long if you leave them, so cook in waves and discard after the safety window.

Nacho cheese warmers

Nacho cheese comes as a canned or pouch sauce poured into a warmer, or a pump dispenser. A standard warmer holds a gallon or so of cheese.

Guests Cheese (1.5 to 2 oz each) Chips Toppings
25 3 to 4 lb 2 large bags jalapenos, salsa
50 6 to 8 lb 4 bags jalapenos, salsa, sour cream
100 12 to 15 lb 8 bags 3 or 4 toppings
150 18 to 22 lb 12 bags 4 toppings
200 24 to 30 lb 16 bags 4 toppings

The weights are estimates from common serving sizes. Bag size varies, so check the label and go by the weight per serving. Cheese sauce can scorch if left unstirred, so keep the heat on low and stir.

Food safety

Hot dogs and cheese are both temperature-controlled foods. Keep them at 135 degrees F or above and discard after about 4 hours if they have been held hot continuously, a common guideline, or reheat once. Don't reuse sauce that has cooled. Wash your hands, use tongs, and put out sneeze guards or covers when crowds are close. See food safety at home parties and keeping food hot outdoors.

Power

A roller grill can draw about 1,000 to 1,500 watts and a cheese warmer less. A single 15-amp household circuit can power about 1,800 watts continuously at 120 volts, so do not combine a roller, a popcorn machine and a coffee urn on one circuit. Ask the venue where the breakers are and add a generator if needed. Read lighting and power for details, and check the nameplate on each machine.

Pair it with the rest of the party

A concession menu fits kids' parties, fall festivals and block parties. Pair with popcorn, cotton candy and snow cones. For seating, picnic tables or a few garden folding chairs are enough, and the roller table goes at the edge of the space, not in the traffic path.

Chicago note

Chicago is hot dog country, and local guests care about toppings: mustard, onions, relish, tomato, pickle, peppers and celery salt are the classic list, with ketchup optional. If you want the style, offer those toppings in small bowls over ice. For public park or forest preserve events, check vending and food rules before you bring equipment.

Frequently asked questions

How many hot dogs do I need per person?

Plan 1.5 per guest at a party, 2 for hungry crowds or kids' events. Order buns to match.

How long do hot dogs take on a roller?

20 to 30 minutes from cold, and 10 to 15 minutes from pre-cooked and warm. Keep them at 135 degrees F or above.

How much nacho cheese per person?

About 1.5 to 2 ounces. A 100-guest event needs 12 to 15 pounds.

Can a hot dog roller run outdoors?

Yes, on a covered, dry table with a weatherproof outlet and protection from wind. Never use electricity in rain.

How long can cheese sit in a warmer?

Hot-held cheese sauce is typically good for about 4 hours at 135 degrees F or above. Stir often and discard anything that cooled.

Do I need a permit?

Not for a private party. If you sell food at a public event, check with your health department and the property owner.
