A full bar sounds generous but needs bottles, mixers, bartenders and several glass types. A signature cocktail station gives guests a memorable drink and keeps the workload small. It fits a cocktail hour in a Chicago hotel, a loft or a backyard in Naperville.

How to choose the two drinks

Pick drinks that complement each other and your season:

  • One spirit-forward drink, such as an old fashioned or a negroni, for guests who prefer a stronger cocktail.
  • One light or fruity drink, such as a spritz, a mule or a lemonade-based cocktail.
  • Optional third: a mocktail so non-drinkers have something with the same presentation. See mocktail bar ideas.

Seasonal tie-ins work well in Chicago. A hot cider cocktail suits a winter wedding, and a citrus spritz suits a lakefront summer evening. If your station is a winter hot drink, see hot cocoa bar for winter.

Batch it before the party

Batching means mixing the base of each drink in advance, so the bartender only adds ice, a topper and garnish. Ask your bartender or bar company which recipes batch well. Drinks that need egg whites or fresh-muddled herbs batch poorly; stirred drinks, spritzes and punches batch well.

Drink style Glass Batches well? Garnish
Spirit-forward (old fashioned) Rocks Yes Orange peel
Spritz Wine or stemless Yes, topper added at pour Citrus wheel
Mule Highball or copper mug Yes Lime wedge, mint
Punch Rocks or coupe Yes Fruit slices
Shaken sour Coupe Partly Citrus twist

What to rent

  1. A 6-foot table or bar. See mobile bar vs back bar if you need a bar front.
  2. Linen and a runner. Use the tablecloth chart for banquet table sizes.
  3. Drink dispensers or pitchers, one per drink, glass or acrylic.
  4. Ice bins, two.
  5. Glasses. One shape per drink: rocks, highball, wine or coupe. Count 1 to 2 per guest; see glasses per guest.
  6. Garnish dishes and picks.
  7. A menu sign, framed or on an easel.
  8. Cocktail napkins and a small trash bin. See the bar tools checklist.

How many servings

Plan 1 drink per guest in the first half hour, then 1 per hour. If you offer only two drinks, assume the more popular one takes 60 to 65 percent of the pours. Batch an extra 20 percent of the favorite. For example, a 100-guest cocktail hour of 90 minutes might serve about 150 drinks, so a 100-drink batch of one and a 70-drink batch of the other leaves a cushion. Confirm quantities with your bartender.

Staffing and safety

Even a batched station benefits from a bartender, partly because they can check ID and limit service. Illinois rules about who may serve alcohol vary by venue and city; read Illinois alcohol rules for private events. Do not rely on friends pouring unless your venue and insurance allow it.

Style the station

A signature station is a styled moment. Use a runner, a framed menu, small flowers and glass jars for garnishes. Color the drinks to match your palette, such as blush for a pink wedding or deep red for a velvet and burgundy winter setup. If lounge seating sits nearby, a velvet dining chair adds a color pop.

Frequently asked questions

What is a signature cocktail?

A signature cocktail is a custom drink chosen to reflect the hosts, the season or the theme of the event. Couples often name one drink after themselves or their pet.

How many signature cocktails should I offer?

Two is the sweet spot. It gives guests a choice and keeps the bar quick. Add a mocktail version of one of them.

Can I have a signature cocktail with a full bar?

Yes, many events do. The signature drink is served as a welcome drink or at a separate station, and the full bar is open behind it.

Do signature cocktails need special glasses?

Not special, but suited to the drink. Rocks glasses for spirit-forward drinks, highballs for long drinks and coupes for shaken drinks.

How do I keep a signature cocktail cold?

Serve over ice in the glass and keep the batch in a chilled dispenser or on ice. Avoid ice in the dispenser itself unless the recipe allows dilution.

Can I serve a signature cocktail myself?

It depends on your venue, insurance and local rules. Many venues require a licensed bartender, so ask before you plan to pour.
