Pizza ovens at weddings, graduations and company parties draw crowds. The oven is a show and the food is cheap per head. It also has real demands: heat, flame, smoke and a trained operator. Here is what you need to know before you rent or hire.

Ovens and what they do

Type Heat up Per pizza Per hour Notes
Wood-fired (mobile) 30 to 60 min 90 sec to 3 min 20 to 40 Best flavor, most smoke
Gas-fired 15 to 30 min 2 to 4 min 20 to 30 Cleaner, easier to control
Electric countertop 15 min 5 to 8 min 6 to 10 Small parties only
Conveyor (caterer) 15 min 5 to 7 min 40 to 60 Not as visual

These are typical ranges, so ask the specific operator for real output. Output drops if toppings are heavy or the oven door stays open.

How many pizzas

A 12-inch pizza cuts into 6 to 8 slices. For a light snack or late-night offering, count 2 slices per guest. As a main meal, count 3 to 4 slices. So 100 guests need 25 to 30 pizzas as a snack, or 50 to 60 as a meal, which takes one oven 1.5 to 3 hours. Many people rent two ovens for 100 guests, or ask for a chef who runs one oven in waves.

  1. 1Step 1Decide the rolesnack, main meal or late-night food.
  2. 2Step 2Count slices2 for a snack, 3 to 4 for a meal.
  3. 3Step 3Divide by 6 to 8 slicesper 12-inch pizza.
  4. 4Step 4Divide by pizzas per hourto get serving time.
  5. 5Step 5Add a second oven or hot-holdif the time is too long.
Decide the role, then Count slices, then Divide by 6 to 8 slices, then Divide by pizzas per hour, then Add a second oven or hot-hold

Space, power and fuel

  • Footprint: A trailer-mounted oven is typically 8 to 14 feet long. Ask the operator for the exact size, because narrow alleys and gates matter in Chicago.
  • Surface: A flat, paved or packed gravel pad. A heavy trailer sinks into wet lawn.
  • Fuel: Wood needs a dry supply and an ash plan. Gas needs a tank and safe storage.
  • Water and handwashing: Provide a hand wash station for the cook.
  • Power: Prep table lights and a small fridge need an outlet. See lighting and power.

Plan staging space for dough, cheese and toppings. A 6 to 8-foot table with a cloth and cold storage under it works. Use a cooler with ice for dairy and toppings; see keeping food cold. For a back-of-house staging area, see catering prep tent.

Safety and rules

Open flame requires care. Keep the oven away from tent walls, low branches and overhangs. A fire extinguisher should be within reach. Guests, especially children, should stay at least 4 feet back. The outside of an oven can reach hundreds of degrees. Never use a wood-fired oven inside a garage, barn or tent.

Rules vary by village and park district. Some require a permit or inspection for open flame or a food vendor, and venues may need proof of insurance from the operator. Ask your village hall, park district and the venue, and ask the operator for their license and insurance. Do not assume a backyard rule applies at a park.

Pairing with the rest of the menu

Pizza fits a casual wedding or a late-night snack, for example around 10 p.m. when the dance floor needs fuel. Add a green salad, a few antipasto platters and a dessert table. Serve pizza on trays at a station, see food station ideas. For seating, high-top tables and a few garden folding chairs keep guests moving.

Chicago note

Chicago has strong pizza opinions, including deep dish and tavern-cut thin crust. A wood-fired Neapolitan-style pie is a different thing, so set expectations. If you want deep dish, a mobile oven is not the right tool; ask your caterer. Winter events with a mobile oven in a tent require a clear venting plan and approval from the tent company.

Frequently asked questions

How many pizzas do I need for 100 guests?

About 25 to 30 12-inch pizzas as a snack, or 50 to 60 as the main meal. A mobile oven makes 20 to 40 per hour.

How fast does a mobile pizza oven cook?

A wood-fired oven can bake a pizza in 90 seconds to 3 minutes once at temperature. Gas ovens take a little longer.

Do I need a permit for a pizza oven at a party?

It depends on your village, venue and whether the operator sells food. Check with your village hall and park district before you book.

Can a pizza oven be used inside a tent?

Generally no for wood-fired ovens. Keep them outside and away from the tent, and ask your tent company.

What space does a mobile pizza oven need?

A flat pad of about 10 x 10 feet plus a clear circle around it. Check gate widths for trailers.

Should I hire an operator or rent just the oven?

Hire an operator unless you have experience. The oven is hot, the dough is fussy and the timing is hard with a crowd.
